2 1/2 cups rice, not instant
5 cups water
1 onion, chopped
1 red and green bell pepper, diced
2 clove garlic, minced
1/2 cup celery, diced
4 cups mushrooms, sliced
1/4 cup vegetable
1 tbsp sage
2 tsp thyme and parsley
Salt and pepper, to taste

Preheat oven to 350. Saute vegetables, garlic seasonings until onion are translucent. Add water and stir well. Bring to a boil and add rice. Stir well. Cover and transfer to oven. Bake for 1 hour or until rice is done. Do not stir or uncover while cooking. Fluff rice when done. Serves 6-8
