1 cup wild rice
3 cups beef broth
1 cup dry red wine
4 green onions, thinly sliced
4 tbsp diced carrots
12 fresh mushrooms, sliced
2 stalks celery, diagonally sliced
2 tsp olive oil
1/2 cup sliced water chestnuts
2 tsp dried parsley flakes
Pepper

Combine first 3 ingredients in a saucepan. Bring mixture to a boil over high heat; cover, reduce heat, and simmer for 30 minutes.

Saute vegetables in oil until tender. Add remaining ingredients to rice; cover and cook another 15 minutes or until rice is tender. Serves 4
