1 - 12 oz can Shoepeg corn, drained
1/4 cup bell pepper, chopped
2 tbsp pimento, diced
1/4 cup celery, chopped fine
1/2 cup onions, sliced thin
1/3 tbsp sugar
1 1/2 tsp Creole seasoning
3 tbsp red wine vinegar
Combine first 5 ingredients and set aside. Combine remaining ingredients, stir well, and pour over vegetable corn mix. Toss, cover, and refrigerate for 8-12 hours. Serves 6-8
