Ingredients:
1 head iceberg lettuce
2 or 3 green onions, chopped
1 - 3 ripe avocados, chopped
1 recipe coleslaw salad dressing
1 bag original size corn chips
Tear the lettuce into bite-size pieces and place into salad bowl. Add the onion. You may keep this chilled for awhile before serving if you wish.
Immediately before serving, peel and chop the avocados, then add to the salad bowl, and stir in the corn chips. Pour on the entire bottle of coleslaw dressing (about 1.5 - 2 cups), or you may use a homemade dressing if you wish.
Serve immediately because the corn chips will be soggy and the avocado will begin to "turn" in about an hour.
Note: As I attempt to avoid using any brand names I must say that the name brand of corn chips is far superior in this particular recipe.
Dressing:
1 cup Mayonnaise
2 - 4 Tablespoons sugar or sweetener
1 Tablespoon vinegar
Dash pepper if desired
Blend well. Add a little milk if the dressing is too thick.
