3 tbsp butter
6 scallions, thinly sliced
1/2 lb mushrooms, thinly sliced
3 tbsp flour
1/2 tsp salt
1/4 tsp pepper
1/2 cup light cream and dry white wine
1 1/2 lb scallops
2 tbsp grated parmesan cheese

Preheat oven to 375. In a medium skillet, melt butter. Cook scallions and mushrooms, about 5 minutes, stirring often. Blend in flour, salt and pepper. Cook 1 minute. Add cream and wine. Cook, stirring until thickened; do not boil. Place scallops in a shallow baking dish or in individual ramekins and top with grated cheese. Bake 30 minutes.
