1 small green or red bell pepper, chopped
1 medium onion, chopped
4 stalks celery, chopped
1 pkg frozen scallops
4 tbsp butter
1 1/2 cups soft bread crumbs
1/2 cup shredded sharp cheddar cheese
1/2 tsp salt
Pepper, to taste
1 cup light cream

Preheat oven to 350. Cover scallops in cold water in a saucepan; bring to a boil; drain immediately. Melt 2 tbsp butter and combine with bread crumbs. Saute vegetables in remaining butter about 4 minutes.

In a greased casserole, layer scallops sprinkled with salt and pepper, cheese and vegetables. Pour cream over top and bake for 30 minutes.
