Salad
1 cup uncooked orzo
3 cups cubed cooked chicken
2 cups seedless red grapes, halved
1 cup chopped celery
1/4 cup chopped onion
1 (20 oz) can pineapple chunks, drained, reserving liquid
1 (11 oz) can mandarin orange segments, drained
1/2 cup slivered almonds, toasted
Dressing
1/4 cup packed brown sugar
1/2 cup reserved pineapple liquid
1/3 cup vinegar
2 tbsp oil
1 tbsp soy sauce
Cook orzo to desired doneness as directed on pkg. Drain; rinse with cold water. In a large bowl, combine cooked orzo and remaining salad ingredients except almonds.
Combine dressing ingredients until well combined. Pour over salad; mix well. Cover; refrigerate until serving time. Garnish with toasted almonds. Serves 8
