Filling:
4 slices bacon, cooked crisp and crumbled
1/4 cup onion, chopped
1 tbsp chopped garlic
1 red bell pepper, roasted and sliced
1 (8 oz) pkg cream cheese, room temperature
1/2 lb shredded sharp cheddar cheese
2 tbsp dried oregano
1/2 tsp salt

4 (12 inch) flour tortillas
Jalapeno pepper

Drain most of fat from skillet bacon was cooked in and saute onion and garlic, about 1 minute. Drain and add to reserved bacon.

Beat the cream cheese until smooth and add reserved bacon mixture along with the remaining filling ingredients until smooth. Spread over one side of each tortilla and roll up. Cover and chill in refrigerator wrapped in plastic wrap until ready to serve.

Cut each rolled tortilla into 1/2 inch slices and place cut side on platter and garnish with slices of jalapeno peppers.
