2 cup shredded cheddar cheese
2 cup sharp cheddar cheese, white cheddar if available
1 cup diced roasted red peppers
2 tbsp to 1/4 cup mayo
1/2 tsp seasoning salt
Dash pepper flakes

Mix cheese, 2 tablespoons of mayo, peppers, and seasoning salt. Add more mayo if the cheese is not binding well. Dip should stick together but not be too creamy. Add a few red pepper flakes and turn up the heat. Chill for 3 hours before serving. Serve with crackers.
