1 (8 oz) pkg feta cheese, crumbled
4 oz cream cheese, softened
1/4 cup well drained diced sun-dried tomatoes, optional
1 small garlic clove, minced
2 tbsp extra virgin olive oil
1/2 cup chopped ripe olives
2 tbsp sliced green onions
1/2 cup chopped walnuts
1/3 cup chopped parsley

Mix feta cheese, cream cheese, garlic, and oil with electric mixer on medium speed until blended. Add olives and onions and mix well. Shape feta cheese mixture into a 10 inch log, wrap in plastic and chill in refrigerator while toasting walnuts. Toast walnuts in a large non-stick skillet on medium-high heat 5 minutes stirring constantly; cool. Remove feta log from refrigerator, roll in parsley and walnuts. Wrap in plastic, refrigerate.

To serve, remove plastic wrap and serve with assorted crackers.
