MARINATED FETA CHEESE WITH KALAMATA OLIVES

12 oz feta cheese block
2 garlic cloves
1 bay leaf
1/2 tsp mixed peppercorns
8 coriander seeds
2 tbsp capers
fresh oregano sprigs
2/3 cup pitted Kalamata olives
olive oil, to cover
1 loaf of french bread
4 plum tomatoes, chopped

Cut the feta cheese in small cubes. Mince the garlic. Place the mixed peppercorns and coriander seeds into a bowl and crush with the back of a spoon.

Put feta cubes into glass container with a secure lid. Add the bay leaf, crushed peppercorns and coriander seeds, garlic, capers and fresh oregano sprigs. Pour enough olive oil into the container to cover the cubes of feta. Toss well, then cover tightly and marinate in refrigerator for several days. This can be done up to two weeks prior to the party day.

When ready to serve, slice the French bread, add olive oil to each slice and toast for several minutes in oven until golden brown. Chop or slice tomatoes (your preference) and add to feta cheese mixture. Serve toast and feta marinade on small plates. Serves 4-6.
