1 each: red,yellow, and green pepper cut into strips
12 cherry tomatoes
3 zucchini, thickly sliced
1 small onion, chunked
8 oz whole button mushrooms
4 tbsp freshly squeezed lemon juice
1/2 cup extra virgin olive oil
1/2 tsp crushed thyme
1/4 tsp crushed mustard seed
1/3 tsp freshly ground black pepper

Wash and prepare all vegetables; slice off the ends of the mushrooms; remove stems from tomatoes. Set aside. Combine oil, lemon juice, and seasoning in a large bowl and whisk together. Stir in vegetables and toss until coated.

Pour vegetables into a grill basket, reserving excess liquid to use as a baste while grilling. Grill about 15 minutes until desired texture is reached. Baste at least once.
