2 lbs sea scallops
1/3 cup white wine
Juice of 2 fresh lemons
1 tsp salt
1/2 tsp pepper
1/2 tsp lemon thyme
1 1/2 cups cracker crumbs
1/2 cup Parmesan cheese
2/3 cup butter

Preheat oven to 325. Rinse scallops under cool water and drain well. Place in 13x9 inch glass baking dish in a single layer. Mix next five ingredients and pour over scallops. Mix cracker crumbs and cheese and spread evenly to cover all scallops. Pour melted butter evenly over crackers. Cover with aluminum foil and bake for 15-20 minutes. Remove foil and broil for 1-3 minutes until light brown.
