1 tbsp olive oil
1 cup chopped onions
3 cups sliced mushrooms
1/4 cup flour
1 1/2 cups milk
1/2 shredded sharp cheddar cheese
1 tbsp Dijon mustard
1 tsp Worcestershire sauce
1/2 tsp pepper
4-5 dashes hot pepper sauce
6 cups frozen California-style mixed vegetables
1/2 cup unseasoned dry bread crumbs
1/2 tsp ground thyme
1 tbsp melted butter

Saute onions and mushrooms until tender, about 6-7minutes. Sprinkle flour over vegetables, stirring well to combine. Gradually add milk, stirring constantly. Cook until mixture becomes thick and bubbly, about 5-6 minutes. Remove from heat and stir in next 5 ingredients.

Pour frozen vegetables into sauce and gently stir to coat the vegetables. Place in a greased casserole dish.

In a small bowl, combine remaining ingredients and sprinkle over vegetables. Cover and bake at 350 for 45 minutes. Uncover and bake an additional 15 minutes or until crumbs become golden brown. Allow to rest about 5 minutes before serving.
