4 boneless, skinless chicken breasts
1 tbsp butter
Cajun seasoning

Saute chicken in butter over medium heat in an ovenproof skillet. Spinkle with Cajun seasoning on one side as heavy or light as desired. Cook 5 minutes, turn and season the other side, cooking 5 minutes longer. (This will blacken the chicken.) Turn two more times and cook 2 minutes each for a total cooking time of 7 minutes on each side.

Remove pan to oven and finish at 350 for 15 minutes.

NOTE: I like to use this in sandwiches or cut up and add to salads.
