Cajun-Style Chicken Breasts

- 2 teaspoons butter
- 4 boneless and skinless chicken breasts, halved
- 1 large red onion, chopped
- 1 green bell pepper, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 2 cups spicy V-8 vegetable cocktail juice
- 1/2 teaspoon hot sauce
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon dried thyme
- 1 teaspoon garlic flakes
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
Melt butter in a heavy nonstick skillet. Add chicken and brown quickly on both sides over high heat. Remove to a platter. Add onion and bell peppers to skillet and cook over moderate heat until soft. Add V-8 Juice, hot sauce, and seasonings. Return chicken to pan. Simmer until sauce is thick. Serve over yellow rice, with a side dish of refried beans with a little bit of fresh green onions on top.
