1 1/2 lbs extra lean ground beef
1 egg, beaten
3/4 cup shredded Cheddar
1 small onion, finely chopped
1/2 medium green bell pepper, finely chopped
2 to 3 ribs celery, finely chopped
1/2 tsp ground black pepper
1/8 tsp paprika
1 tsp seasoned salt
1/2 cup milk
1/3 cup Italian-style breadcrumbs
4 slices lean bacon

Combine beef, egg, cheese, onion, bell pepper, paprika, and seasoned salt in a bowl and mix well. Add milk and breadcrumbs. Mix until ingredients are well blended.(If necessary, add a little additional milk. When making meatloaf, mix until there are no air pockets in meat and press the meat into desired shape.

In small open roasting pan, form into oval mound. Lay strips of bacon on top. Bake at 400 for approximately 1 hour. Remove to paper towels to drain. Spoon seasoned tomato sauce onto oval shaped serving platter, place meatloaf on platter, and slice.
