3/4 cups raspberry juice (100% juice)
2-1/2 cups raw honey
1 (3-ounce) package liquid pectin
1/2 teaspoon butter to reduce foam
Combine 3/4 cups juice, butter, and honey in a 6 quart kettle, stir well. Bring mixture to a rolling boil over high heat, stirring constantly. Quickly stir in pectin. return mixture to a rolling boil, and boil, stirring constantly for 1 minute. Remove form heat. Ladel the jelly into the hot jars, leaving 1/4 inch headspace. Wipe the rims of the jars with a clean damp clothe and add the lids and rings, turing the rimgs until just finger-tight. Place jars in boiling water bath for 10 minutes. Cover jars with towel until jars are cool.
makes about 3 half pint jars.
