Using a sharp chefs knife, thinly shave sprouts into ribbons and discard any super firm stems. Get a skillet screaming hot, then drizzle in some extra-virgin olive oil. Add the shredded sprouts and season generously with salt, then cook, shaking the pan and stirring frequently, until the sprouts are just cooked and caramelized in spots.

Garnish with chopped toasted walnuts or pecans, a squeeze of lemon, a drizzle of honey and/or your favorite green leafy herbs.
