2 (15 ounce) cans garbanzo beans
2 tablespoons sesame oil
4 tablespoons olive oil
6 tablespoons lemon juice
3 garlic cloves, pressed
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon black pepper

Directions

1.Drain beans, reserving liquid.
2.Blend beans, along with the other ingredients and 1/4 cup of the liquid.
3.Process until the mixture is smooth.
4.Add liquid until the desired consistency is reached.
5.Adjust seasonings along with more cumin, lemon juice, salt and pepper.
6.Serve with warm pita wedges

Footnotes

Make varieties by adding roasted sun-dried tomatoes, red peppers, kalamata olives or roasted garlic: slice a bulb of garlic in half, pour olive oil into it, fit the top back onto the bottom, wrap in foil and bake at 400 for 1 hr. Athena Club wrap: Spread hummus on a spinach wrap, layer olives, feta cheese, tomatoes, roasted peppers, etc., wrap it up and enjoy.
