Ready in: 1-2 hrs

  • 1 cup cooked or canned chickpeas
  • 3 tablespoons fresh lemon juice
  • 1/4 cup tahini
  • 1 clove garlic, crushed
  • 1/2 tablespoon ground coriander
  • 1/2 tablespoon ground cumin
  • 1 tablespoon soy sauce
  • 1 tablespoon chopped fresh parsley

If using canned chickpeas, rinse and drain them well. Add the chickpeas, lemon juice, tahini, garlic, coriander, cumin, soy sauce, and parsley in a food processor. Process until smooth. Place in a covered container and chill in the refrigerator for 1-2 hours before serving.

Before serving, drizzle with olive oil if desired. Serve with toasted pita wedges, chips, or fresh vegetables for dipping. Also makes a good sandwich spread instead of butter or mayonnaise.
