Ingredients:
3-4# boneless Pork Loin Roast
1/2 c. Apple Juice
1/2 c. Soy sauce
1/2 tsp liquid Smoke
1/2 tsp dry Mustard
1/2 tsp Onion powder
1/2 tsp Garlic powder
1 tsp Basil
Directions:
Place loin roast in 1 gal zip-lock bag. Combine all remaining ingredients and add to the bag. Press air out and close bag. Let marinade in refrigerator for 2 hour or more turning occasionally. Remove roast from bag and reserve marinade. Line a shallow roasting pan with foil and add rack and spray with non-stick oil. Place roast on rack and bake at 325 degrees 2-2 ½ hours. Remove roast from oven and let rest 10-15 minutes before carving.
For gravy or dipping sauce boil reserved marinade, meat drippings, and 2 cups water. Mix 1/4 c. water and 2 Tbsp corn starch, then slowly stir into boiling sauce. Boil 1-2 minutes, will thicken a little as it cools.
