3 - 3 1/2 lbs boneless pork top loin roast
4 cloves garlic, minced
1 tsp pepper
1 – 2 tbsp Italian seasoning
Place roast in a shallow roasting pan. Cut 8 slits in roast at 2 inch intervals; insert the clove halves deep into the slits. Brush olive oil evenly over roast and sprinkle with Italian seasoning and pepper. Bake at 350 for 1 1/2 hours, (about 30 minutes per pound) until internal temperature is 155 degrees F. Remove from oven and cover loosely with foil. Let rest for 10 - 15 minutes or until internal temperature reaches 160 degrees F. before slicing to serve.
