- 2 meaty ham hocks
- 1 pound dried black-eyed peas
- black pepper, to taste
- hot sauce, to taste
Place the ham hocks in the crock pot. Rinse the peas well then add to the crock pot. Add enough water to cover everything completely. Cover the crock pot and cook on low heat for 8 hours or until the black-eyed peas are tender and the meat is falling off the ham hocks. Check periodically to see if it needs more water. Do not let it get too dry. Remove the hocks from the crock pot. Cut meat away from the bone and then into small pieces. Discard the bones. Add the meat back to the crock pot and discard the bones. Season to taste with black pepper and hot sauce.
