Makes 6 servings.
4 lb. spareribs
1 c. brown sugar, packed
1/2 c. chili sauce
1/4 c. ketchup
1/2 c. dark rum
1/4 c. soy sauce
1 T. Worcestershire sauce
2 tsp. dry mustard
3 cloves garlic, minced
1 tsp. black pepper
Cut ribs into pieces. Parboil at low simmer for at least 2 hours.
Preheat oven to 350F.
Put remaining ingredients in saucepan and boil for 5 minutes; let cool.
Sauce should be thick; if not, cook some more - if sauce is too thick, add water.
Salt ribs and place in a shallow roasting pan, meaty side up
Roast ribs at 350F for 30 minutes.
Dip ribs in sauce with tongs and return to oven.
Reduce heat to 250F and bake ribs for 1 1/2 hours.
Baste ribs with remaining sauce every 15 minutes.
