Category: Pork
Prep Time:       Cook Time:       Total Time:

Makes 6 servings.

4 lb. spareribs
salt
1 c. ketchup
1/2 c. Worcestershire sauce
1 tsp. chili powder
1 tsp. salt
2 dashes Tabasco sauce
1 1/2 c. Water
1 lemon, thinly sliced
1 onion, thinly sliced

Cut ribs into pieces. Parboil at low simmer for at least 2 hours. Preheat oven to 450F.
Salt ribs and place in a shallow roasting pan, meaty side up.
Roast at 450F for about 30 minutes. While ribs are roasting prepare basting sauce.
Combine ketchup, Worcestershire sauce, chili powder, 1 teaspoon salt and Tabasco sauce in a saucepan and bring to a boil.
Sauce should be thick; if not, cook some more - if sauce is too thick, add water. Double ingredients for sauce, if more is desired.
Once roasting is completed, reduce oven to 350F. Drain excess fat from ribs. Top each piece of ribs with a slice of lemon and onion.
Pour sauce over ribs and bake at for 1 1/2 hours. Baste every 15 minutes.
