Serves 6-8
2 Tbsp shortening
2 lbs stew beef, cubed
1 onion, thinly sliced
1 cup water
10 3/4 oz can cream of mushroom soup
1 cup sour cream
1 1/4 cup milk
1 tsp salt
1/4 tsp pepper
4 potatoes, peeled and diced
1 cup shredded Cheddar cheese
1 1/4 cup whole grain wheat flake cereal, crushed
Melt shortening in a large skillet over high heat. Add beef and onion; cook until browned. Drain; stir in water and bring to a boil. Cover; reduce heat to low and simmer for 30 minutes. Set aside. Combine soup, sour cream, milk, salt and pepper in a medium bowl; mix well. Pour meat mixture into an ungreased 13x9 inch baking dish; arrange potatoes over meat. Pour soup mixture over potatoes; sprinkle with cheese and cereal. Bake, uncovered at 350 F for 1 1/2 hours.
