Make regular mashed potatoes, using 6 medium potatoes, butter and milk

1 1/2 lb ground beef
1/2 cup chopped onion
3/4 cup beef broth
1/4 cup flour
1/4 tsp salt
1/8 tsp pepper
1 can cream of mushroom soup
1 (8 oz) carton sour cream
6 oz Velvetta cheese, cut into cubes
2 cups cornflakes, crushed

Prepare mashed potatoes; set aside to cool. In a large skillet, brown meat and onion. Drain off fat. In a small bowl, stir together next 4 ingredients until well combined. Stir broth mixture into meat mixture. Cook and stir over medium heat until thickened. Remove form heat. Stir in soup and sour cream. Transfer into a 3 quart casserole; set aside.

For potato topping: Shape about 2/3 cup mashed potatoes into a ball. Make a hole in the center of the ball; insert a cube of cheese in the hole, then reshape into a ball, enclosing the cheese. Repeat with remaining mashed potatoes and cheese. Roll each ball in crushed cornflakes. Arrange on top of meat mixture. Bake, uncovered, at 350 for 40 minutes or until mixture is bubbly and potatoes are heated through. Serves 6
