3 tablespoons vegetable oil, divided
2 large onions, each cut into 8 wedges
2 large green bell peppers (1 red and 1 green), cut into ½-inch strips
1 pound boneless, skinless chicken breast, cut into ¼-inch strips
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh lime juice
6 (8-inch) flour tortillas
Instructions
Heat 2 tablespoons oil in a large skillet over medium-high heat. Add the onions and bell peppers and sauté for 10 to 12 minutes, or until the onions are lightly browned; place in a bowl and set aside.
Heat the remaining 1 tablespoon oil in the skillet and add the chicken, garlic powder, salt, and black pepper. Sauté for 5 to 6 minutes, or until the chicken is no longer pink.
Return the vegetables to the skillet and cook for 3 to 5 minutes, stirring occasionally.
Pour the lime juice over the chicken and vegetables; mix well. Divide the chicken mixture equally among the tortillas and serve.
Serves 6.
