4 boneless, skinless chicken breasts, sliced thin
1/4 tsp salt
1/8 tsp pepper
1 onion, chopped
1 green or red bell pepper, seeded and sliced 1/2 inch thick
2 clove garlic, minced
2 cups crushed tomatoes
1 tsp dried basil
1/2 tsp dried oregano
2 tbsp chopped fresh basil or parsley, garnish
Spray skillet with cooking spray over medium heat. Season chicken with salt and pepper and cook about 4 minutes, turning to brown all sides. Remove from skillet and set aside, covered, to keep warm.
Add vegetables to skillet and cook over medium heat until onion softens. Add garlic and stir for 1 minute. Stir in crushed tomatoes and seasonings. Bring to a simmer, reduce heat to low and cook for 10 minutes. Return chicken to skillet and cook for 10 minutes or until the juices run clear. Serve immediately and garnish. Serves 4
