3 medium (about 1 lb) ripe peaches, peeled
and sliced
3 large eggs
1 cup half & half or light cream
3/4 cup all-purpose flour
6 Tbsp butter, melted and cooled
2 Tbsp almond-flavor liquor
1/2 tsp vanilla
1/8 tsp salt
1/3 cup (plus additional 2 Tbsp per recipe)
sugar
1/4 cup sliced natural almonds

Preheat oven to 400F. Grease shallow 2-qt casserole or baking dish. Arrange peach slices evenly in casserole.
In blender, combine eggs, half & half, flour, melted butter, almond liquor, vanilla, salt and 1/3 cup sugar; blend till smooth.
Pour batter over peaches; sprinkle with almonds and remaining 2 TBSP sugar.
Bake clafouti 35-40 minutes or until puffed and golden brown. Cool on a wire rack 15 minutes (clafouti will deflate as it cools)
Serve warm.
