Ready in: 30-60 minutes

  • 6 large potatoes, peeled and cubed
  • 2 cups pasta shells or preffered pasta
  • 3 cups half and half
  • 1 1/2 cup shredded monterey jack cheese
  • 1 cup shredded mild cheddar cheese
  • 1 sweet onion, chopped
  • 4 celery stalks sliced
  • 2 cups sliced fresh carrots
  • 1 can cream of celery soup
  • 2 cloves garlic, crushed
  • salt and pepper, to taste

Boil potatoes, onion, celery, and carrots until potatoes are soft.

In a separate pot, cook the pasta till done; drain. When potatoes are done add pasta and remaining ingredients. Reduce heat to low and simmer for half an hour stirring often to prevent scorching.

Serve hot; garnish with more shredded cheese and chives and carrot shreds.
