Beef Enchiladas

- 1 pound ground beef
- 1/2 package taco seasoning
- 3 tablespoons water
- 1 package (10 count size) flour tortillas
- 1 can (10 ounce size) mild enchilada sauce
- 1 can (8 ounce size) tomato sauce
- 1 1/2 cup shredded cheese (Mozzarella, Cheddar, or other)
Preheat the oven to 325 degrees F. Heat a skillet over medium-high heat. Add the ground beef and cook, stirring to break up the meat, until the beef is no longer pink. Drain off any excess grease. Add the taco seasoning and water to the skillet. Cook for 4-5 minutes, stirring frequently. Meanwhile, heat the tortillas as directed on the package. Fill each tortilla with some of the beef mixture and roll up. Place seam-side down in a 9x13-inch baking dish. In a bowl, mix together the enchilada sauce and tomato sauce. Pour evenly over the enchiladas. Top the enchiladas with the shredded cheese. Place the dish in the oven and bake at 325 degrees F for 20 minutes, or until bubbly and heated through. Serve hot with sour cream, salsa, guacamole, shredded lettuce, etc.
