1 1/2 cup cooked and shredded beef
1 1/2 cups shredded sharp cheddar cheese
1/2 cup chopped onion
1 can cream of mushroom soup
1 can tomato soup
10 oz can enchilada sauce
12 corn tortillas
Combine beef, onion and 1/2 cup cheese; set aside. Combine soups and sauce. Dip tortillas in hot oil a few seconds on each side to soften. Top each with a heaping tbsp beef mixture, roll up and place seam side down in a 13x9 inch baking pan. Pour sauce on top and sprinkle with cheese. Bake at 350 for 1/2 hour.
