2 large cans enchilada suace
1 pkg corn tortillas
3 lbs ground beef
1 bell pepper, diced
1/2 whole garlic, mashed
1/2 tsp salt and pepper
2 enchilada or taco seasoning packets
1 large onion, diced
1 cup cooked Mexican rice
8 oz picante or salsa
1 pkg shredded cheddar or Mexican blend cheese

Warm sauce and pour 1/4 cup into bottom of a casserole dish. Dip tortillas in shells.

Brown meat along with next 6 ingredients; drain and add rice. Fill shells and place seam-side down in dish. Pour any remaining enchilda sauce and picante sauce over all and cover with cheese. Bake at 350 until cheese melts. Makes 24

NOTE: I divide into 2 foil pans and freeze one for later.
