Country Ribs In Beer

- 4 pounds country style ribs
- salt and pepper
- 2 onions, chopped
- 1/2 cup barbecue sauce
- 1/2 cup beer
- 1 teaspoon cornstarch
- 1 tablespoon water
Trim any excess fat from the ribs. Season the ribs on all sides with salt and pepper. Add the chopped onions to the bottom of the crock pot. Place the meat in an even layer on top of the onions. Combine the barbecue sauce and beer in a small bowl until well mixed. Pour evenly over the meat. Cover the crock pot and cook on high for 3-4 hours or on low for 4-6 hours. When meat is tender, gently lift the ribs and onions from the crock pot with a slotted spoon or spatula and place on a platter. Cover with foil to keep warm. Skim off any fat from the liquid in the crock pot. Pour the liquid into a saucepan and bring to a simmer over medium heat. Combine the cornstarch with the water until smooth then stir into the liquid. Cook, stirring, for 1-2 minutes or until the sauce is thickened. To serve, pour the sauce over the meat on the platter. Serve hot.
