Cheese sauce:
2 tablespoons cornstarch
1/4 cup water
1 cup milk
1/4 cup butter
8 ounces shredded mozzarella cheese
2/3 cup shredded Swiss cheese
2 teaspoons garlic
1 teaspoon onion powder
3 tablespoons sour cream

Meat:
4 ounces frozen salad shrimp
2 tablespoons butter

Other:
Frozen Tater Tot potatoes
1 Kaiser roll, sliced in half and toasted

Combine water and cornstarch in small bowl. Stir together until cornstarch is dissolved. Pour into a medium saucepan. Add milk and butter. Heat over medium heat until butter is melted. Stir in cheeses, a small amount at a time until melted.

Add spices and blend with an immersion blender until smooth. Add sour cream; stir until blended. Keep warm.

Fry frozen potatoes until golden brown.
Place butter in a small skillet; cook until melted. Add frozen shrimp and saute until water has disappeared.

To plate horseshoe, place toasted roll on plate. Place potatoes on top of bread. Place shrimp on top of Tater Tots. Pour desired amount of cheese sauce on top of shrimp.
Makes 2 servings.
