1 jar prepared lemon curd
1 pkg fresh berries of choice
Sugar
Lemon juice
1 loaf shaped angel food cake, cut into long thin strips
Non-stick cooking spray
1 prepared plain cheesecake

Spread angel food strips out on a sprayed sheet pan. Then spray the top of them with cooking spray as well. Place in an oven at 350 until golden brown, about 10 minutes. But every oven is different, so keep an eye on them! Set aside.

If using large berries, like a strawberry, cut them into quarters. Then mix sugar and a small amount of lemon juice with the berries and let them sit for 20-30 minutes. The sugar will bring out the juices and break down the berries, making a nice sauce. Set aside.

To assemble the horseshoe, place a 4x4 piece of cheesecake on a plate. Top cheesecake with berry mixture. Then arrange the angel cake strips on top of the berries. Heat the desired amount of lemon curd in the microwave to make it runny enough to pour. Pour heated lemon curd over top of everything. Garnish the dessert shoe with whipped cream, mint, additional berries, and raspberry sauce.
