•1/4 small red onion, very thinly sliced
•2 medium peaches, halved and very thinly sliced
•1 tablespoon brown sugar
•1 tablespoon fresh lemon juice
•Pinch of red pepper flakes
•Coarse salt and ground pepper
Rinse onion under cool water. Drain, blot dry and transfer to a medium bowl. Add peaches, sugar, lemon juice and red pepper. Season with salt and pepper. Let stand 15 minutes. Makes 4 servings.
Note: Delicious with grilled pork chops or chicken.
