2 1/2 lb pork tenderloin
1/2 tsp mustard and dried thyme
1/2 cup dry sherry and soy sauce
3 cloves garlic, minced
2 tbsp fresh ginger root, minced
Glaze
3/4 cup apple jelly
2 tbsp dry sherry
1 tbsp soy sauce
Rub meat with mustard and thyme. Place in a dish and add next 4 ingredients. Coat the loin well, cover and refrigerate overnight.
Preheat oven to 325. Bake for 25 minutes per pound or until internal temperature reaches 160 degrees. Bake the poirk occasionally while cooking.
Meanwhile prepare glaze, heat jelly in a small saucepan over medium heat. Add sherry and soy sauce, stir well to low and let simmer. Pour over tenderloin when it done. Serves 4-6
