PROSCIUTTO, RADICCHIO AND MIXED MELON SALAD

2 head radiccho, cut into fine shreds
10 oz parmesan cheese, shaved
1 1/3 cup each diced cantaloupe, honeydew and watermelon, cut into 1/2 inch pieces

Dressing
3 tbsp sugar
1/2 cup chopped mint
3 tbsp lemon juice
1 tbsp each balsamic vinegar and dijon mustard
8 slices prosciutto ham

Wash and dry shedded radicchio between paper towels and roll up and refrigerate for 10 to 15 minutes to soak up water.

In a bowl, combine melon, and dressing ingredients together and toss with radicchio to coat. Refrigerate at least 30 minutes before serving. Arrange prosciuto on plate and arrange melon salad on top. Garnish with cheese. Serves 8
