1 lb cooked bow-tie pasta, drained and cooled
1/2 cup olive oil
1/2 lb mozzarella cheese, dice
1 cup sliced fresh basil
1 cup sun-dried tomatoes packed in oil, drained and thinly sliced
3 garlic cloves, minced
Salt and pepper to taste
4 anchovies, minced (optional)
1 tbsp capers, rinsed
1 can pitted black olives, drained
In large bowl, toss the pasta with olive oil. Stir in remaining ingredients. Let sit at least 30 minutes at room temperature before serving. Serves 6
