Vinaigrette
2 tbsp olive oil and white wine vinegar
1 tbsp thinly sliced green onion or snipped chives
1/2 tsp dried basil, crushed
1 tsp sugar
1/2 tsp Dijon mustard
1/8 tsp pepper

Salad
3 large yellow sweet peppers, thinly sliced into rings
3 large red tomatoes, sliced
Spinach leaves
2/3 cup crumbled gorgonzola or blue cheese (about 3 oz)

Combine all vinaigrette ingredients in a jar; cover and shake vigorously. Chill until ready to use.

In a skillet, cook pepper rings, covered, in a small amount of boiling water for 1-2 minutes or just until crisp-tender; drain and cool. Chill, if desired.

To serve, arrange tomatoes and peppers on a spinach lined platter. Sprinkle crumbled cheese on top of salad. Shake dressing well; drizzle over salad.
