3 tbsp red wine vinegar
2 tbsp plan low-fat yogurt
1/8 tsp ground pepper
1 cup chopped tomatoes
1/4 cup sliced ripe olives
1/2 cup crumbled feta cheese or grated parmesan cheese
3 tbsp salad oil
2 tbsp crushed garlic
1 quart cooled, cooked pasta, rotelle, shell, etc
1/4 cup peeled, sliced cucumbers and chopped red onions
2 tbsp chopped parsley

In a large bowl, whisk together first 5 ingredients. Add remaining ingredients, tossing to coat well; cover. Refrigerate 6 hours or overnight; stirring occasionally. Serves 5
