Dressing:
2 tbsp bacon fat
2 tbsp flour
1 small onion, minced
1 cup water
1/2 tsp powdered mustard
2 tbsp vinegar

Salad:
1 3/4 lb fresh spinach, cleaned, drained and chopped
salt and pepper to taste

Optional additions:
Crumbled bacon,
Diced hard-boiled eggs,
Diced red and/or green peppers,
Sliced strawberries, or
Orange segments

Melt bacon fat. Stir in flour and onion. Gradually stir in water, mustard, and vinegar. Cook over low heat, stirring constantly, until smooth and thickened. Pour over spinach. Mix well, and season to taste. Sprinkle with crumbled bacon, or any combination of the optional additions, if desired.
