1 lb chopped frozen spinach, thawed and drained
1 tbsp butter
1/2 cup diced white onions
1 (4 oz) can drained mushrooms
2 cups cold sour cream sauce (recipe follows)
1 tsp sugar
1/2 tsp salt and pepper

Sour Cream Sauce
1/2 cup flour
1/4 cup olive oil
1/4 tsp white pepper
1/2 tbsp chicken bouillon
1/2 tbsp granulated garlic
1 tbsp chopped cilantro
2 1/2 cups water
1 cup sour cream

Spinach salad
2 cups Italian dressing
1/2 cup balsamic vinegar
1/4 cup red wine vinegar
1 tbsp dried basil
1 cup salsa
2 sliced tomatoes and red onion rings
2 oz sliced mushrooms
3 oz feta cheese, crumbled
Fresh baby spinach

Prepare sauce first: Place oil and flour in a saucepan and cook over medium heat, stirring constantly with a wire whisk, approximately 1-2 minutes. Add spices and water. Remove from heat and add sour cream.

Prepare salad dressing: Combine first 5 ingredients and let sit for 30 minutes. Add remaining ingredients just before serving..

Prepare quesadillas: Place butter in a saute pan and add onions and mushrooms. Saute 3-5 minutes. Add garlic, salt and pepper. Mix well. Add spinach and mix. Add sour cream sauce and mix well. Spread on one tortilla and top with another. Brown on each side. Serve with salad on the side.
