1 (10 oz) bag fresh spinach, washed and torn
2 large carrots, cut into thin strips
1 medium purple onion, thinly
2 yellow squash, cut in half and sliced
3 tbsp chopped dried tomatoes, optional
1/3 cup rice wine vinegar
1-2 tsp dried tarragon
1 tbsp olive oil
1/4 tsp dry mustard, pepper and salt
1 clove garlic, minced
12 oz skinned and boned roasted chicken, cut into 3/4 inch pieces

Combine first 4 ingredients in a large bowl. Add tomatoes, if desired. Set aside. Combine vinegar and next 6 ingredients in a small jar; cover tightly and shake to combine. Toss with spinach mixture and chicken. Serves 4
