4 boneless, skinless chicken breasts
16 oz fresh spinach, washed and torn
8 cherry tomatoes
5 boiled eggs, slices
1/4 tsp oregano and paprika
Salt and pepper, to taste
1 tbsp olive oil, 1 tsp reserved
3 tbsp vinegar
1 tbsp Dijon mustard
6 tbsp honey

Marinate chicken in seasonings and olive oil over night. Preheat oven to 350. Saute, then remove. Cut into strips and place into oven for 10 minutes. Wilt spinach in saute pan with 1 tsp oil. Mix vinegar, mustard and honey. Place spinach on plate and top with chicken, eggs, tomatoes and cheese. Serves 4
