1 cup cornmeal
1/2 tsp salt
2 3/4 cups water

Bring water to a boil. In a bowl, combine cornmeal, salt and 1 cup cold water. Slow add mixture to boiling water, stirring constantly. Cook and stir until mixture returns to a boil. Reduce heat; cook over low heat for 10-15 minutes or until mixture is very thick; stirring constantly. Pour hot mush into a greased loaf pan. Cool; cover and refrigerate overnight. Turn out of the pan and cut into 1/2 inch thick slices.

In a skillet, heat 3 tbsp butter and add slices of mush. Fry for 10-12 minutes on each side or until brown and crisp.
