1 pkg ramen noodles
1/4 cup walnuts, chopped
1/2 head green leaf lettuce, chopped
1/2 large red bell pepper, chopped
1 bunch scallions, chopped
4 tbsp balsamic vinegar
2 tbsp soy sauce
1 tsp sugar
Salt and pepper
1/2 (11 oz) can mandarin oranges, drained

Preheat oven to 350 to toast nuts and noodles. Bake for about 5 minutes, shake the pan carefully and continue to bake for another 5-8 minutes until lightly toasted and fragrant. Remove from the oven and cool.

Combine lettuce and vegetables together in a bowl.

Combine vinegar, soy sauce, sugar and salt and pepper. Stir well to dissolve sugar. Add oranges to salad. Pour dressing over the salad and toss. Sprinkle the nuts and noodles over top before serving.
